Instructions
- Step 1: Break the bread Tear or cut the bread into bite-size pieces to get 9 to 10 cups of bread.
- TIP: Use a light white bread like French or Italian, or an egg bread such as brioche or challah. Day-old bread is best.
- Step 2: Fill the baking pan Lightly grease the baking dish and then add the bread pieces. Mix in the raisins, chocolate chips, or berries.
- TIP: Use fresh raspberries, blackberries, or blueberries.
- Step 3: Melt the butter Melt the butter and set it aside to cool.
- Step 4: Make custard Beat the eggs and sugar with a whisk or mixer for 4 minutes, until they’re thick and light yellow. Add the vanilla and cinnamon, and then beat in the cooled butter, the milk and cream, and the rum or brandy.
- Step 5: Add the custard to the bread Pour the custard over the bread. Make sure all of the bread pieces are submerged.
- Step 6: Draw a hot bath Place the baking dish inside a large pan or roaster. Add hot water to the pan until it reaches halfway up the side of the baking dish.
- Step 7: Bake Bake in a 350 degree oven for an hour. When a toothpick inserted in the center comes out clean, the pudding is done.
- Step 8: Top and eat Let the pudding cool briefly before serving. Top it with ice cream or whipped cream, and enjoy.
