Instructions

  • Step 1: Preheat oven Preheat your oven to 350 degrees and then grease the loaf pan with cooking spray.
  • Step 2: Load food processor Load the onion, celery, tomato, carrots, garlic and the salt and pepper into the food processor and pulse until it’s pureed.
  • Step 3: Add other ingredients Add the egg, tofu, and Parmesan cheese to the vegetable mixture and process until the tofu and egg are in small pieces.
  • Step 4: Add bread crumbs Stir in the breadcrumbs with a fork or your clean hands.
  • Step 5: Press into loaf pan and bake Press the mixture into the loaf pan and bake for 50 minutes.
  • TIP: Use the loaf pan as a mold and bake on a sheet pan for a crispier crust.
  • Step 6: Top with cheddar cheese Remove the meatloaf from the oven and top it with the cheddar cheese and crushed tomatoes. Then bake for another 10 to 15 minutes, or until the cheese is melted.
  • TIP: Use your oven’s broiler setting to give the loaf a nice golden brown color.
  • Step 7: Cool and serve Cool and serve immediately with gravy.
