How to Cook Indian Food with Maya Kaimal

Hi. I’m Maya Kaimal, Indian cookbook author and founder of Maya Kaimal Fine Indian Foods, which is my line of Indian sauces. You can check me out on the web at mayakaimal.com.

I grew up in Boston eating my South Indian father’s amazing cooking and my American mother’s excellent cooking. But it was my father’s cooking that really captured my imagination. And on our family trips back to India, I found myself spending a lot of time in my aunt’s kitchen taking notes and collecting recipes and trying to figure out how I could make that amazing food back home. Those are the recipes that have become my Indian cookbooks. Curried Favors was the first one I published and Saving the Spice Coast focusing on Karola, the region my father’s from, was my second book.

It’s really exciting to be able to shore my favorite flavors of India. The cookbooks are an excellent way to find out about what homemade Indian food tastes like. But I realize that not everybody has time to make Indian food from scratch. So I launched my line of Indian sauces in 2004 because I felt that people should still have a chance to experience homemade Indian food even if they didn’t have time to make it.

In developing the sauces, I tried to replicate the way that an Indian cook would actually make the sauces in their home. So we followed traditional methods. We used the best ingredients that we can. Our sauces are all natural. And you can find our products in Whole Foods, William Sonoma, Costco, and you can get us online as well.
